Here are a couple of questions we hear a lot, so we thought we would answer them for you.

For the moment, our coffee roasts once a fortnight on every second Tuesday, and is shipped the next day.

Once we’ve got set up, we’ll be roasting every Tuesday.

Your subscription will ship the day after it’s roasted, and should get to you before the weekend.

In general, our coffee tastes best within three weeks of opening.

Stored unopened, we’ve had good results with bags opened up to six weeks after roasting.

After that, you might notice a gradual decline in the vibrancy and complexity of your coffee, especially if you’re brewing espresso.

One of the advantages of darker roasts is that they are much more soluble, and therefore easier to brew, than lighter roasts.

Compared to the coffee you usually use, you may need to grind slightly coarser than usual.

Otherwise, start by using your regular brew recipe. If you notice that your coffee is more bitter than normal, you can use a slightly coarser grind, or let the water sit for 60 seconds after boiling before you brew.

We suggest starting with a brew ratio of roughly 1:2. If you’re using a small basket, like those that usually come with home espresso machines, try a 16g dose of ground coffee and roughly 30g for a double espresso.
